Recipe proportions were way out of whack, so made several changes and it turned out delicious:
For one person:
-used 45g nut butter, other sauce quantities the same - this made 2 portions of sauce so the other went into fridge
-used about a third of the vegetables listed, same amount of garlic
-used Quorn fillets, defrosted and sliced
-added garlic and chilli flakes after chicken and broccoli
-added fresh coriander at the end
