It was all right. I didn’t want mushy sweet potatoes so oven roasted them instead and had them on the side. The rest of the skillet I modified—more veg, green beans and about six Birds Eye chilies to kick it up. Could have used more cheese but I ended up adding sour cream, that made it much more rounded. The remainder will make a nice wrap with sour cream as a sauce. I might make it again since it’s healthy and can be doctored but the recipe isn’t great as it’s written.
