Update: Did strips of thigh at 400 (as opposed to 425) for 30 minutes. Still too dry. Tablespoon of honey was a nice addition.
It was pretty decent! We did cut the olive oil down to 1/4 cup (because 1/2 cup is ridiculous and would drown it). The chicken was too dry, so I would cut back on the bake time by 5-10 minutes. I would also add a tablespoon of honey to balance the balsamic out.
