Love this! I added thyme, had to replace the tomato puree for tomato paste and white wine vinegar for red wine vinegar cause that's what I had available... and it tastes delicious.

Tomato paste is what Europeans call tomato puree so you made it as written. What we call tomato puree, Europeans call passata, but I'm probably spelling it wrong. From the wording of the recipe, it sounds British, so you got it right the whole time.
