Perfect sweetness and texture - used arborio as that’s all I had and it turned out lovely. I tend to use the ingredients differently though, I dump it all in a Pyrex dish, give it a stir, grate nutmeg over the surface and blob some butter on the top. Whack it in the oven on gas 4 for 2 hours. After the first half hour I open the oven and give it a stir then I don’t stir again. This creates a lovely skin on the top (our favourite bit!)
