Was great tasting. Took to heart some of the comments about the lemon flavor and upped the zest (which was whisked into the egg mix before adding to spinach mix). Colors are kind of blah, so after finishng added halved grape tomatoes onto (might cook them for last couple mins next time). Recipe is very soft, so to add a bit more texture, and some more onion flavor, put some fried onions on top. Could have used fried jalapenos if looking for heat. Will definitely be making this on again. Yummy
