This is an easy dinner, using ingredients that I usually have in the cupboard and fridge anyway. Makes plenty, so I always end up with leftovers to freeze. It's not really a showstopper ragu, I've made better and feel this could probably be improved with a bit more seasoning, a splash of plant milk or some dark choc to make a richer tomato sauce. However, when you're just cooking up a simple dinner for yourself this certainly does the job!
