More salt and pepper doesn't hurt. I cut up the bacon with a kitchen shears before cooking it, then drained off most of the grease into my bacon fat jar before putting in the chicken to cook. (I used my Granitestone 16-inch skillet, and it made cooking this dish an absolute joy.) A 5-ounce container of fresh baby spinach is just right for our tastes, and much more delicious than frozen. If you're NOT dairy-averse, a little grated parmesan over the top is certainly not a bad idea.
