I'm always leery of cooking chicken on high in the crockpot, so I started this too late one day and it just had to be put in a container and refrigerated. Had a bowl the next day, over basmati rice, and man, this will be in the rotation fairly regularly. Easy to put together, just need to shred the chicken when it's cooked. (More chili powder may have made its way in the crockpot than called for, but to each their own. Also used Rotel diced tomatoes and green chilies.)
It wasn't bad at all, but I may experiment with doing something to get a bit more liquid in there so it's more of a chili consistency. That said, there's NO disappointment in how this recipe turned out!
