optional, oregano, cilantro, celery leaves

optional, (cumin, coriander, chipotle powder, smoked paprika)
1 tablespoonsapple cider vinegar
optional- for extra tang and for more healthy probiotics
honey
or sugar, to taste, optional, good if making sriracha style
