Turkey Pho

Don’t throw out your turkey bones! Use it for turkey pho or any soup. It’s a great way to use up all of your leftover turkey and since the turkey has already been marinated, it adds an extra flavor to the soup.

Instructions

Step 1
Obviously we need a turkey carcass. Shred off as much meat from the bones and set that aside. The bones will be used to make the broth.
Step 2
Using a large soup pot, add water and the turkey bones. Char the onion and ginger in an air fryer or on the stove and add to the pot. Add star anise, pho seasoning (according to the measurements), rock sugar, and fish sauce. Boil the turkey bones for about 1 hour to release all the flavors. Skim off the scum that floats to the top to keep the broth clear. Taste and adjust seasonings. Cook pho noodles according to package instructions. Add shredded turkey then broth and seasoning/condiments.
