Instructions

Step 1
Preheat oven to 350 degrees and line baking sheets with parchment paper
Step 2
To make buttered pecans: sauté the chopped pecans and butter in a skillet over medium heat, stirring frequently, for about 3 minutes until toasted and fragrant. Keep an eye on them as they can burn easily. Set aside
Step 3
Using a stand mixer or a hand mixer cream softened butter, granulated and brown sugars for 2 minutes
Step 4
Beat in the egg and vanilla extract until well combined
Step 5
In a separate bowl sift or mix together flour, baking soda and salt
Step 6
Beat flour mixture into wet mixture, 1/2 cup at a time
Step 7
Fold in butterscotch chips and the cooled buttered pecans
Step 8
Refrigerate dough for 25 minutes
Step 9
Form dough into 25-27 balls and place on baking sheet at least 2 inches apart. Top some or all with an extra pecan (optional)
Step 10
Bake for 10-12 minutes. Once removed from oven add a small sprinkle of sea salt (optional) then let cool on pan for 5 minutes before transferring to cooling rack
