Ingredients: 6 large egg whites (room temperature this is just under 1 cup (7.5 oz)); ¾ teaspoon cream of tartar; ⅛ heaping teaspoon salt; 1 ½ cup granulated sugar (caster sugar or superfine sugar would also work); 1 ½ teaspoon vanilla extract; 2 cups heavy whipping cream; ⅔ cup powdered sugar; 1 teaspoon vanilla extract; lemon or other fruit curd (optional); fresh fruit (strawberries, blueberries, blackberries, sliced kiwi, and raspberries are all great options!)

Pavlova has a crisp exterior with a marshmallowy-soft interior. It's a gorgeous, sophisticated, but approachable treat that's perfect topped with sunny lemon curd and fresh fruit.
