Did you love or hate lamingtons as an Aussie kid? I use to lick off all the chocolate and eat the sponge but leave the jam behind! Just was not a fan of jam at all as a child. Now I loooove jam and therefor I’ll eat the whole lamington with no qualms.

150gplain flour
150gcaster sugar
4eggs

2 Tbspbutter

1 tspvanilla paste
1 Tbspwater

1 tspbaking powder

Instructions
Step 1
Preheat oven to 160C fan forced and line a lamington tray (about 34x25cm) with baking paper
Step 2
Add eggs to a large mixing bowl and whisk with an electric mixer on high for 90 seconds
Step 3
Slowly add the sugar about 1 tbsp at a time until the mixture is light in colour, and forms ribbons as seen in the video. This may take about 10 - 15 minutes
Step 4
Combine the butter, vanilla and hot water and set aside
Step 5
In another bowl mix together the flour and baking powder then sift into the egg/sugar mixture and fold until just combined. Then fold in the butter/vanilla liquid and fold again until just combined. Do not over mix!
Step 6
Pour into the baking tray, bang a couple of times to get air bubbles out then bake for 20 - 25 minutes.
Step 7
Once the sponge has cooled, carefully slice away any unevenness then slice the sponge in half so you have two large flat sponges (aka not what I did in the video haha.)

Spread the jam all over one of the pieces then sit the other on top. Then cut into 12 even squares.
Step 8
Mix together all of the icing ingredients except for the coconut. Start off with a small amount of water and add more to create thick but slightly runny icing. Almost like the texture of maple syrup.

In another bowl add the coconut

Dip the cake into the chocolate icing then into the coconut then onto a drying rack. They are ready to eat instantly. Enjoy!
