After sitting for 8 hours, the peach mango flavor was not strong enough. I added a little over 2 cups of mango cubes and a little more peach. I also swapped out honey for the sugar. This recipe makes about two full quarts of salsa. I love how fresh it is and how really there was no extra sugar. I roasted a poblano to put in, but I wasn't able to add it for various reasons. I hope I will be able to add it next time. (this recipe is not very spicy.)
