Lemon drizzle cake

Butter splits when eggs added, keep mixing once flour is added and it should go smooth

Made this, but used the suggestion of weighing the eggs in the shell and making the flour/sugar/butter weight the same. Tasted delicious, lasted a short while and everyone loved it. It definitely took more than 45 minutes, but probably not the hour many others experienced.

Took 60 mins to cook

Delicious. Used zest & juice of 2 Lemons seeing as recipe instructed cutting up 2 anyway 😋. Needed cooking for 1 hr.

Needs an hour in the oven

Add 1 tbs of poppy seeds. Use plain flower and add baking powder

Super tasty, make sure to mix the drizzle icing properly straight before pouring it over, as when I did it the sugar was at the bottom so I didn't get proper icing. Apply the drizzle asap because if it's not warm, the icing won't harden and it'll just be wet. It's a bit bland however, and quite crumbly. I like to add more lemon drizzle. It's also nice to leave in for longer to achieve a crispy top. Still delicious though! My mum loves it. I enjoy baking for her.

First time I made it added too much lemon zest (turns out there is such a thing) from two large lemons and just made it bitter. Got better at it with practice and used a round tin differently to loaf in the recipe. Worked a treat and had plenty of room for the drizzle. Once cooled I cut it in half lengthways and added my own buttercream between the layers for an additional extra sweetness. Make sure to pit the drizzle of lemon juice and sugar on just as you get it out of the oven and really hot. Cools to make that crisp top (lemon from a bottle makes it even sweeter, very nice and what I did myself) .

Don't over fill the tin as there will be no room for the drizzle. Make extra drizzle and use granulated sugar

Add the zest of 2 large lemons. Use juice from both for drizzle. Makes it more lemony!

Delicious recipe but I use the zest of 1 and ½ lemons as your juicing them any way
