This is an absolutely super fresh wonderful salad to have for dinner or lunch or parties or potluck! I accidentally bought mint instead of basil lol and I was able to come up with this salad that has olive oil and salt as the dressing which I thought was kind of odd, but oh boy, it was so good! This one’s a keeper!
UPDATE: Add a drizzle of Raspberry or regular Balsamic (white is bright - or red), and it adds even another level of flavor!
