Ingredients: 8 slices Deli turkey (sliced thick - this is usually 1 pound); 1 cup cranberry sauce (homemade or store-bought); 2-3 cups Prepared stuffing (homemade (see recipe below) or store-bought); 3 cups Prepared turkey/chicken gravy (homemade (see recipe below) or store-bought); 2 cups sliced carrots (1/4" slices); 1 tablespoon olive oil; salt and pepper to taste; 9 slices bread (mulit-grain or white,); 3 tablespoons butter; ⅓ cup onions (diced); ½ cup celery (diced); ¾ cup chicken stock (can use turkey stock); 1 teaspoon dried sage leaves (can use fresh sage); 1 ½ tablespoons fresh parsley (can use dried parsley); 1 teaspoon kosher salt; pepper to taste; ⅓ cup butter; ⅓ cup AP flour; 3 cups chicken stock; 2 tablespoon half and half (can use cream or whole milk); ½ teaspoon salt; add other herbs and spices to your liking
