Ingredients

1 teaspoonkosher salt
1 teaspooncumin
1 teaspooncinnamon
1 teaspoonbrown sugar
½ teaspoonground allspice
½ teaspoonpaprika
½ teaspoonground black pepper
3 poundspork butt
bone-in, cut off bone in large chunks
2red bell peppers
chopped
1onion
large, chopped
4garlic cloves
chopped
1chipotle peppers in adobo
chopped
1 tablespoonbrown sugar
¼ teaspoonground cayenne pepper
¼ cupchili powder
12 ouncesbeer
1 cupapple cider
2 x 14 ouncecan diced fire roasted tomatoes

14 ouncecan crushed tomatoes
1 teaspoonsalt
14 ouncecan pumpkin puree
3sweet apples
small, such as Golden Delicious or Gala, cored and chopped, not peeled
2 x 14 ozcan dark red kidney beans
s, drained and rinsed
Instructions
Step 1
For pork rub, mix all seasonings together in a small bowl. Rub mixed seasonings all over pork and place pieces at bottom of 6 quart slow cooker.
Step 2
Add all remaining ingredients except chopped apples and kidney beans. Stir to combine. Cook on HIGH For 5-6 hours or LOW for 10-12 hours.
Step 3
Once the meat is fall apart tender, transfer pork to a cutting board. Add the apples and beans to the slow cooker, turn heat to HIGH.
Step 4
While the apples and beans are cooking for 30 minutes, allow the meat to sit until cool enough to handle. Shred the pork and add back to the pot. Serve chili with sour cream, fresh cilantro, and shredded cheese.
