Slow Cooker Cauliflower Soup

Ingredients
8 servings

6chicken bouillon cubes
dissolved in 3 cups water

3 cupsfat free milk

2 cupsshredded carrots

1 cuppotatoes
peeled and diced

1red pepper
diced

1 cupcelery
diced including leaves

2 headscauliflower

1 tablespoondried onion flakes

3garlic cloves
shredded

1 teaspoonPaprika seasoning

2 cupsextra sharp cheddar
added in the last half hour
Instructions
Step 1
Dissolve the bouillon cubes in boiling water (I use the microwave).
Step 2
Chop, shred, dice and everything to the crockpot except the cheese.
Step 3
Cook on high for 4-6 hours or low for 8-10.
Step 4
Purée with an immersion blender to make some of the soup creamy and thick. But, leave some parts chunky.
Step 5
In the last half an hour stir in the cheese.
