Slow Cooker Creamy Tortellini Soup

We love this. We prefer breakfast sausage over Italian. I never have condensed milk so I used a mix of whole milk and HWC and it's just fine, especially with the cornstarch slurry. We like kale instead of spinach

I converted to instant pot. Brown sausage, onion and garlic. Add veggies, broth and seasonings. Stir well. Add tortellini (I used 20oz frozen) push down but don't stir. Add spinach. Pot will be full. Stuff it in. High pressure, 0 minutes, instant release. Add cream and cornstarch slurry. Hit cancel and then saute to heat. Then turn off or keep warm. I didn't need the milk.

I only had 16 oz of evaporated milk in hand, but it was fine. I also didn't have beef stock, so I improvised by using vegetable stock and a packet of brown gravy. This soup was outstanding.

Used homemade seitan for the meat, added some peas, and used less spinach (we didn't have enough). We also didn't end up adding the milk at the end since it was already thin enough. It was pretty good but I would've preferred a much less milky base, maybe just a higher broth-to-milk ratio would've done the job (this felt more like pasta cereal than pasta soup!)

Very creamy and plenty of veg. I used chicken broth, opted for the spicy Italian sausage, and added and a few dashes of cayenne pepper and Worcestershire sauce. Omitted the extra milk and the bullion. Pairs well with a slice of sourdough

Flavor was a bit bland needs a good bit of spicing up

This recipe turned out delicious. I subbed a few ingredients. I didn’t have any Italian sausage, spinach, or condensed milk. I made it meatless and replaced the spinach with mushrooms and the condensed milk with half a block of cream cheese. Sprinkled in a small handful of shredded cheese for good measure.

Everyone always asks for the recipe, including my teenage nephew!

I subbed meatless Italian sausage to make it vegetarian. It was delicious and super simple to make!
