Instructions

Step 1
Preheat oven to 400 degrees. Line a baking sheet with parchment paper and/or cooking spray
Step 2
Toss the sweet potato fries with olive oil, salt & pepper. Spread out on baking sheet and bake for 20-30 minutes, flipping midway, until sweet potatoes start to brown and crisp
Step 3
In a separate bowl combine greek yogurt, cheese, spinach, artichokes & spices
Step 4
Spread cheese mixture on the sweet potato fries (either on baking sheet or a cast iron pan) and broil for 5-10 minutes, until cheese gets bubbly and just starts turning golden brown
