Ingredients
8 servings
¼ cupolive oil
3yellow onions
large, thinly sliced
½ teaspoonkosher salt
4cloves garlic
minced
1 tablespoonfresh thyme
chopped
½ cupdry white wine
3 tablespoonssherry vinegar
2 tablespoonsall-purpose flour
4 cupsbeef bone broth
or stock
1 teaspoonworcestershire sauce
¼ teaspoonground black pepper
1 poundpasta
uncooked
⅓ cupheavy cream
½ cupparmesan cheese
grated or shredded, more for topping
fresh parsley
chopped, for garnish
Instructions
Step 1
Heat a large dutch oven or pot to medium heat and add olive oil, onion and 1/2 teaspoon salt
Step 2
Cook for 5 minutes, stirring frequently, then reduce heat to medium low. Cook for 45-60 more minutes until onions are caramelized. Stir frequently to keep them from sticking to the bottom of the pot
Step 3
Add garlic and thyme and let cook for 1 minute, then add wine and sherry vinegar to deglaze and scrape bottom of the pot
Step 4
Stir in the flour for 1 minute
Step 5
To the pot stir in broth, Worcestershire sauce, salt, pepper and pasta. Bring to a boil
Step 6
Cover, reduce heat to simmer and let cook for 15-20 minutes, until the liquid is absorbed and pasta is cooked to al dente
Step 7
Turn off heat and stir in heavy cream and cheese
Step 8
Serve topped with a sprinkle of parmesan and fresh parsley
