If you use a flat top electric stove I’d turn the burner off once the oil is up to 350. Then I’d slide the pot on and off the hot burner to keep the oil in the 350 range. My oil went up to 380 pretty fast with the pot on the hot burner. The donuts got pretty brown fast.
Also I just tore holes in the biscuits with my thumbs and stretched them out a bit. Otherwise use the cutter if you want donut holes.
