Christiane's floats are a traditional Caribbean snack, quick, easy, and versatile - can be made savory or sweet.
Growing up in Martinique, food was always around Christiane. She learned to make the most of what they had. Although meat was a luxury, she grew up eating very fresh fish every day. Her father used to go out to sea with his friends and catch fish, while her mother used to raise pigs and chickens.
Christi started cooking as soon as she could hold an onion. Her mother always wanted her to be involved – one sister would peel a carrot, another an onion. They would always be in the kitchen, cooking in pairs or fours. Because they always cooked on charcoal, she has fond memories of working together to clean off black residue from her pots.
She teaches cooking because it makes her feel as though she is back home in Martinique – with drums, Calypso, carnivals, and everything else. She’s proud to represent her culture and most importantly pass it down to her children and grandchildren.

Instructions
Step 1
In a jug of warm water add sugar and yeast and let it sit for at 20min or until yeast starts fermenting
Step 2
Add salt to your flour and mix thoroughly before adding water
Step 3
Make a hole in the middle of your flour, and gradually add the water. Add bit by bit, kneading the dough to create a soft but tight ball.
Step 4
Let it rest for 15-20 minutes, then pull a small part of the dough and roll into a little ball.
Step 5
Meanwhile, make sure your oil is hot. Roll out the dough into a thin circle shape and then place in the oil, using your spoon to pour oil on top.
Step 6
Once brown turn it over, and then when golden brown, take out and enjoy!
