Delicious and rich and a lovely amount of sweetness (I used 350g sugar but would try 300g next time just to see).
So easy to make! Recipetineats has a more detailed recipe with an improved texture. However, this really had a caramelised top, possibly because it doesn't call for whisking until the sugar is dissolved.
Nicola Lamb has an amazing recipe for a lemon Basque cheesecake with caramelised lemons on the side that is nicer still.
Used chatgpt to scale this for a 27cm tin. Cooked for 45-50 mins or so until it was very properly caramelised. Will definitely be doing this again.
For perfectly clean slices, we found a large sharp chef knife, wiped clean in between slices, worked very well.
Doesn't need anything to go with it as it's a lovely complex layered flavour, but for decor I might try a small puff of squirty cream. Definitely no berries or chocolate, they would distract way too much I reckon.
