Best Ever Carrot Cake

Absolutely delicious and moist. Halved quantity of icing as it would have been too sickly with the full amount. Best carrot cake I have ever made.

First time making a Carrott cake...it was a great recipe would definitely recommend. However..for next time I might try putting it in two pans instead of cutting it in half... Reason being it took a long time to cool day....hence a issue with the frosting (make sure cake is cold before frosting) when up against a deadline
