Ultimate Banana Bread

Great texture - cooked all the way through but the edges didn’t dry out like some breads. Used a little less than 1tsp cinnamon and would use even less, more like 1/2 tsp next time. Would omit the sugar from the top so it doesn’t crisp, and would also cover with tinfoil ~halfway through baking (personal preference, I prefer banana bread soft). Used 5 pretty good sized bananas but didn’t measure, wouldn’t use less than 5 unless they were enormous. Added chopped nuts and would again. Could also add mini chocolate chips. Cooked for at least 65, maybe 70 minutes.

Added walnuts. Husband said it didn't taste like banana (but there were 6 bananas in it)!!! I'm thinking the spices need adjusting - it was very cinnamon/nutmeg heavy.
