add only as much as needed to cover vegetables

½ cupshell pasta
dry, uncooked, small

1zucchini
medium, sliced into halves or quarters

½ cupcanned red kidney beans
or cooked, drained and rinsed

½ cupcanned cannellini beans
or cooked, or great northern beans, drained and rinsed

1 cupsfresh baby spinach
or kale, chopped, optional

½ teaspoonbalsamic vinegar
optional but adds great flavor

shredded parmesan cheese
or grated, for serving

fresh parsley
finely chopped, for garnish, optional
