Instructions
Step 1
To a medium bowl, add the tea biscuits. Using your hands crush them very well until they are bite size pieces.
Step 2
Now add the date paste to the bowl followed by 1 tablespoon coconut oil or ghee.
Step 3
Mix using your hands (you can wear gloves or oil your bare hands). Keep mixing until they are well combined.
Step 4
Take about 2 tablespoons of the mixture at a time and make them into balls gently rubbing in between the palm of your hands.
Step 5
Melt the chocolate chips and ½ teaspoon coconut oil in a small bowl for 15 seconds in the microwave. Mix, then heat again for 15 seconds. Chocolate should be melted, if not, place for another 15 seconds in the microwave.
Step 6
Using a fork, drop the ball of date biscuit into the melted chocolate to coat. Place on a tray covered with parchment paper. Use another fork to assist in placing on tray.
Step 7
You can choose to cover them all with chocolate or some.
Step 8
Sprinkle all the date balls with finely shredded coconut.
Step 9
Place in the freezer for 10 minutes. Cut in half or bite through.
