Instructions

Step 1
Line 20 sweet thins along parchment lined baking sheets, top side facing down
Step 2
On 20 of the thins, spread a layer of marshmallow fluff (about 1 teaspoon each)
Step 3
Top each with another plain thin, pressing down slightly, making 20 mini sandwiches
Step 4
Place chocolate chips and coconut oil in a microwave-safe bowl and microwave for 90 seconds, stirring every 30 seconds, until chocolate melts completely. Can also melt in a small stovetop pan
Step 5
Gently coat each bite entirely with melted chocolate and place back on parchment-lined baking sheet
Step 6
Freeze for at least 30 minutes to allow chocolate to harder
Step 7
Store in the freezer or refrigerator in an airtight container
