Ingredients
8 servings

1 cupdark brown sugar
packed

2 sticksunsalted butter
melted

⅓ cupmolasses
or honey

1 teaspoonvanilla extract

2eggs

2 cupsgluten-free flour

1 teaspoonbaking soda

1 teaspooncinnamon

½ teaspoonsalt

2 cupsgluten-free oats
whole, or quick

1 stickunsalted butter
softened

1 cuppowdered sugar

1 cupmarshmallow fluff

1 tablespoonmilk
if needed
Instructions
Step 1
Preheat oven to 350 degrees and line baking sheets with parchment paper
Step 2
In a large bowl whisk together butter and brown sugar, then whisk in the molasses (or honey), eggs and vanilla
Step 3
In a separate bowl combine flour, baking soda, cinnamon and salt
Step 4
Add dry ingredients to wet ingredients and combine well, then mix in the oats
Step 5
Refrigerate dough for 15 minutes
Step 6
Scoop dough onto baking sheets, forming 16-20 cookies, making sure to leave room for them to spread*
Step 7
Bake for 8-10 minutes. The cookies will still be very soft, but don’t over-bake them! **
Step 8
Leave cookies on the baking sheet and allow cookies to cool for at least 60 minutes (but closer to 2 hours is better)
Step 9
To make the filling, use a hand mixer to beat together softened butter, powdered sugar and marshmallow fluff. Add milk if needed
Step 10
Spread filling on cookies and form into 8-10 sandwiches
