Easy Paella with Chicken, Prawns and Mussels

Name: Easy Paella with Chicken, Prawns and Mussels

Ingredients: 6 chicken thighs; Salt and pepper; 2 tbsp sauce flour (or plain); Splash of olive oil; 1 chorizo (I use the Cooking Chorizo de Leon by Unearthed, as it is sugar free); 1 finely chopped onion; 4 cloves garlic; 2 litres chicken (or fish) stock; 2 pinches saffron; 2 tsp paprika; 500g Bomba paella rice; 2 peppers – red, orange or yellow; 1 tin tomatoes; 20 king prawns (or large packet of frozen king prawns); 20 mussels; 2 handfuls frozen petits pois; 1 bunch parsley; 1 lemon, quartered
