Chicken Drumsticks and Spanish Rice (Arroz Rojo)

Instructions

Step 1
Preheat your oven to 400F degrees. Spray your pan with cooking spray and line up your chicken drumsticks. I bought the pre-seasoned drumsticks from Costco but you can also add your own seasonings if you by them unseasoned. Once oven is preheated, put drumsticks in the oven for 40 minutes, their internal temperature should reach 165F degrees.

Step 2
Once the 40 minutes are up, use a basting brush to brush the juices over the drumsticks. This will add more flavor :)
Step 3
Rinse your rice and let it dry sufficiently, you will be putting it in hot oil. Let rice sit as you make the tomato sauce.
Step 4
In a blender, add 1/2 of your white onion, 4 tomatoes (chopped in half) and 2 garlic cloves. Blend until smooth and saucy.
Step 5
Heat 8 tbsp of olive oil in a large pan and slowly add your rice once oil is hot (on medium heat). Continue frying your rice until it starts to turn a nice brown color.
Step 6
Lower the heat and slowly add in your tomato mixture. Hot oil and liquid does not mix well, so be sure to lower heat and add slowly. Once all the sauce is in, spread it evenly across the rice so it's all covered.
Step 7
You can now add your 4 cups of chicken broth and Knorr de tomate.
Step 8
Now that all the liquid is in and your Knorr cube has dissolved, add in the other half of your white onion (chopped), two garlic cloves, mixed vegetables and the serrano peppers. You can cut a slit in the middle of both peppers so more of their flavor comes out. Cover the rice and let it cook for about 10 minutes.
Step 9
Uncover the rice. You'll notice that the tomato sauce has clumped up around the edges. Take your spoon and begin to spread the sauce evenly across all the rice. This will help avoid white spots (missing tomato sauce) in your rice.
Step 10
Cover again and let rice cook for another 10-15 minutes until all liquid has evaporated.
