Instructions
Prep:15minCook:2h 55min
This comforting and flavourful slow cooker dish that combines tender chicken, a creamy sauce, and risoni (or orzo), is one we all love to eat at our place. Why we love this slow cooker creamy French onion chicken risoni recipe There’s lots to love about this simple chicken dinner recipe. This risoni recipe is very easy to prepare – just add chicken and a handful of ingredients to the slow cooker, then let the slow cooker do its work. The only attention needed is to add the beans, spinach and cream towards the end of the cooking time. While it’s already full of flavour, you can add a few herbs at the end, too, if you like. What’s in our creamy chicken risoni recipe: key ingredients French onion soup mix: this powerhouse ingredient gives the dish a rich, savoury flavour – with sweet caramelised onions and a smooth creamy texture. Chicken thigh cutlets: these become tender and juicy from the slow cooking, yet still hold their shape. Risoni: this is a small rice-shaped pasta (known to many as ‘orzo’). As it cooks, it helps to thicken the sauce to a rich creamy consistency. Dijon: this lovely smooth mustard adds a slight kick, while adding depth and lifting the sauce to the next flavour level. Thyme: a classic herb used in French cuisine, it is perfect for long, slow cooking. Green beans: fresh beans add extra veg and crunch to this chicken dinner recipe. Pouring cream: cream brings an extra level of lusciousness to the dish and helps to loosen up the pasta and sauce. 💡 Tip: keep your eyes on the prize The risoni absorbs the creamy sauce and becomes deliciously soft. However, I’ve found that the risoni can become a bit mushy if overcooked, so it’s important to keep an eye on it towards the end of the cooking process and then serve it straightaway.
