Pineapple Whipped Cream

This was a really great whipped cream. I was a little worried about the gelatin and not heating it up, but it worked great. The pineapple flavor was a little light and artificial, but not bad. I mixed in some pineapple curd and it tasted a little like a piña colada, even though I didn’t add any coconut.
