Ingredients

1 stickunsalted butter
melted

¾ cupbrown sugar
or coconut sugar

1egg

1 teaspoonvanilla extract

1 cupgluten-free flour

⅛ teaspoonsalt

⅓ cupdried cranberries

4 ozcream cheese
softened to room temp

2 tablespoonsunsalted butter
softened to room temp

1 cuppowdered sugar

¼ cupwhite chocolate chips

⅓ cupdried cranberries
Instructions
Step 1
Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper + spray with nonstick spray
Step 2
In a large bowl whisk together butter and sugar, then whisk the egg and vanilla
Step 3
Add flour and salt and combine well, then fold in the dried cranberries
Step 4
Transfer batter to baking dish and spread evenly
Step 5
Bake for 17-19 minutes and let cool completely
Step 6
To make the frosting, using a stand mixer or hand mixer beat together the cream cheese and butter until well combined, then beat in the powdered sugar 1/4 cup at a time
Step 7
Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds, or in a stovetop pot stirring frequently
Step 8
Once the bars are cooled spread on a layer of the cream cheese frosting, a layer of dried cranberries, then lastly a drizzle of the white chocolate
Step 9
Let cool again for at least 10 minutes before cutting into 8 triangle pieces
