Instructions
Step 1
In a small bowl or glass combine gelatin with ice-cooled water and place in the fridge for 10 minutes or until spongy.
Step 2
Cut melon into rings 3cm thick. (I've got 4 pieces)
Step 3
Scoop and discard seeds.
Step 4
Then remove the flesh.
Step 5
Cut the flesh into cubes and transfer to the saucepan.
Step 6
Cut mango into cubes and add to the saucepan. Use an immersion blender and blend until smooth. Add sugar and bring it to a boil.
Step 7
Then remove from the heat and add gelatine, mix well until gelatin dissolves completely. Leave it to cool at a room temperature.
Step 8
Place two layers of cling film onto a work surface, then put your melon ring on top(work with 1at a time) wrap 1 side of the melon ring with cling film, and secure well to avoid any juice leakage.
Step 9
Place your wrapped melon rings onto the tray that fits your fridge.
Step 10
Fill in melon rings with jelly juice. Put in fridge to firm( I put it overnight)
Step 11
When ready, remove the cling film and cut each round into 4 pieces
