Pear, Gorgonzola and Walnut Salad — London Bruncher

This is such a classic combination of flavours, and the honey balsamic dressing really brings everything together! It’s such a simple salad to throw together and looks great on the table for a BBQ or dinner party!

Instructions

Step 1
Toast the walnuts in a dry frying pan for a couple of minutes until fragrant. Set aside to cool before roughly chopping.
Step 2
Put all of the ingredients for the salad dressing in a jar (I use empty nut butter jars) and shake until you get a thickened emulsion.
Step 3
Put the rocket in a large salad bowl and top with the pear slices, chunks of Gorgonzola and the toasted walnuts.
Step 4
Drizzle over the salad dressing and serve.
