Instructions
Step 1
Preheat oven to 400 degrees and line two baking pans with parchment paper.
Step 2
In food processor or stand mixer mix, mix cheese, flour, salt, red pepper flakes and herbs. Pulse until you get coarse crumbs.
Step 3
Cut butter into 1/1 inch chunks and add to flour, cheese mixture. Pulse until the mixture resembles coarse crumbs, with some pea size clumps of butter still remaining.
Step 4
Add heavy cream and pulse till mixture starts to clump together and forms a mass.
Step 5
Lightly flour a work surface and flour top of dough. Use your hands to form a rectangle about one inch high. Cut rectangle in half.
Step 6
Dust the work surface wirh more flour and roll each block of dough into 8 x 10 inch rectangle about 1/8 inch thick.
Step 7
Cut into 1/4 inch thin strips with pizza cutter or sharp knife.
Step 8
Transfer to baking pans about 1/4 inches apart, and bake for 12 to 14 minutes till lightly browned. Rotate pans half way thru baking.
Step 9
Cool on racks and enjoy.
