Instructions

Step 1
Preheat oven to 350F
Step 2
Grease 8x8 pan w/ non-stick spray. Line the pan with parchment paper and grease again. Set the pan aside.
Step 3
Combine chopped chocolate, Espresso powder, 15g cocoa powder in a heat proof bowl and set aside.
Step 4
Add butter to a small saucepan. Cook over medium heat until the butter comes to a vigorous simmer (stirring often). Immediately, pour hot butter over the chopped chocolate mixture and let it sit for 2 minutes. Whisk till smooth.
Step 5
In a stand mixer w/ the whisk attachment, whisk together the sugars, vanilla salt and eggs for exactly 10 min on med-high.
Step 6
With the mixer still on, pour in the slightly cooled chocolate mixture and mix till smooth
Step 7
Sift in flour and remaining cocoa powder w/ a rubber spatula gently fold until just combined
Step 8
Add in chocolate chunks and mix till evenly distributed within the batter.
Step 9
Pour batter into a baking pan and smooth out the top. Refrigerate covered for 8-12 hrs
Step 10
Bake for 20 min, Remove from the oven, slam on a flat surface 2-3 times. Return to oven for 10 min. Remove brownies and let them cool in the pan.
