Instructions

Step 1
Fill a 12-inch cast iron skillet or Dutch oven with oil. (If using a skillet of a different size, increase or reduce the amount of oil to fill it halfway up.) Attach a clip-on thermometer and preheat the oil to 350°F, keeping the burner at medium-high heat.
Step 2
Season the chicken with salt, pepper, and Chile garlic seasoning and set aside.
Step 3
In a large shallow dish, combine flour, oregano, thyme, salt, pepper, and cayenne pepper. In another shallow dish, beat eggs with buttermilk and hot sauce. Dip chicken in egg mixture, then place in flour mixture, a few pieces at a time. Turn to coat.
Step 4
Place the breaded chicken into the 350 degree oil. Fry 3 or 4 pieces at a time. The chicken will drop the temperature of the oil so keep it as close to 350 degrees as possible. Fry each piece for 14 minutes, turning each piece about half way through, until the chicken reaches an internal temperature of 165 degrees F.
Step 5
Remove from the oil and place on baking rack. Let them rest for at least 10 minutes before serving.
