Deep Fried Chicken Burger

Instructions

Step 1
Slice the chicken breast lengthwise into 3 or 4 slices depending on the size of the chicken breast.
Step 2
Put a slice of the chicken in between 2 sheets of cling film.
Step 3
Using a tenderising hammer, rolling pin or the base of a heavy pan and flatten out the until the chicken is half the starting thickest then place in a bowl and repeat with all the chicken slices.
Step 4
Please wash your hands thoroughly after touching raw chicken
Step 5
Add in 2 tbsp of oil to the bowl and mix ensuring the chicken pieces are coated in the oil.
Step 6
Add the marinating ingredients and mix in the ingredients until all the chicken is coated then set aside.
Step 7
In a separate bowl add the self-raising flour and the cornflour and mix until combined.
Step 8
Add the coating ingredients to the flour and mix until combined.
Step 9
Add the yoghurt to the marinated chicken and mix thoroughly.
Step 10
One piece at a time place the chicken slices into the flour mixture.
Step 11
Ensure to coat the chicken thoroughly, squeezing the flour into the chicken, gently tap off the excess and rest on a plate, repeat until all the chicken slices have been coated.
Step 12
Heat a pan of oil to 160 - 165 degrees.
Step 13
Once the oil has reached temperature, add the coating chicken to the hot oil, please use tongs to avoid burning your hands.
Step 14
Cook the chicken on both sides for around 6 minutes. Check the chicken is cooked all the way through by cutting into the thickest piece.
Step 15
Remove from the oil and place onto a wire rack and allow the excess oil to drain.

Cut the bread buns in half and lightly toast,

Finely shred the Iceberg Lettuce and slice the onion and tomato
Step 18
Time to plate up, add a teaspoon of mayonnaise to each half of the toasted bread bun, on the base of the bun add a little red onion add some shredded lettuce, add the fried chicken on top followed by some more onion slices and a slice of tomato, and top with the lid, serve with fries. Lick you’re lips and enjoy.
