Instructions
Step 1
Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.
Step 2
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 3
In a large bowl, beat the room-temperature butter with both sugars until light and fluffy. This should take around 2-3 minutes.
Step 4
Beat in the eggs one at a time into the butter and sugar mixture, making sure to mix well after each addition. Stir in the vanilla extract.
Step 5
Gradually add in the dry ingredients to the butter mixture, stirring just until combined.
Step 6
Fold in the semi-sweet and dark chocolate chips, ensuring they're evenly distributed throughout the dough.
Step 7
Using an ice cream scoop or a large spoon, scoop out 1/4 cup of dough for each cookie and place it onto the prepared baking sheets, leaving about 2 inches of space between each cookie as they will spread while baking.
Step 8
Bake for 15-18 minutes or until the edges are golden but the centers are still soft and slightly under-baked. This is the secret to achieving that perfect gooey texture!
Step 9
Let the cookies cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
