Ingredients

1 poundelbow macaroni
1 cupcelery
diced
1 cupCarrots
diced or shredded
½ cuponions
diced
3 tablespoonsdried parsley flakes
8eggs
Hard boiled, coarsely chopped
1 cupsugar
¼ cupflour
kosher salt
to taste
freshly ground black pepper
to taste
⅓ cupapple cider vinegar
1 ½ cupwater
1 cupmayonnaise
¼ cupmustard
Red peppers
Optional, or yellow, optional, finely diced
Instructions
Step 1
Cook elbow macaroni according to package instructions. Drain and rinse with cool water. Place macaroni in a large bowl and set aside.
Step 2
To make dressing: In a medium sized saucepan, combine 1 cup sugar, 1/4 cup flour, 1 tsp salt, 1/3 cup apple cider vinegar and 1 1/2 cup water. Cook until thickened, then cool completely.
Step 3
To cooled dressing add 1 cup of mayonnaise and 1/4 cup of mustard and mix well. Add 3/4 of this mixture to macaroni.
Step 4
Add celery, carrots, onions, parsley and hard boiled eggs. Mix well.
Step 5
Refrigerate macaroni salad for several hours. The macaroni will soak up alot of the dressing, so if you like a moister salad, add the remaining dressing.
