Stuffed Sweet Potatoes

Instructions

Step 1
Bake sweet potatoes at 425° F for around 1 hour (don't let them get too soft or they will rip)
Step 2
Cook your beef with some oil, garlic, & listed spices. (Season as desired)
Step 3
Once your meat is fully cooked, add in your diced tomatoes, spinach, grated zucchini, & black beans.
Step 4
Scoop out the sweet potato filling & set it aside. You should be left with the skin of 5 sweet potatoes.
Step 5
Let everything cool. Add back in your mashed sweet potato to each skin & add a layer of your bison mixture to each potato skin.
Step 6
Top them off with some cheddar cheese. Broil all potatoes for 3-5 minutes until the cheese darkens.
