Instructions
Step 1
Preheat the oven to 375°F (190°C).
Step 2
In a skillet, heat 1 tablespoon of olive oil over medium heat.

Add the minced garlic and sliced mushrooms to the skillet, and sauté for about 5 minutes until the mushrooms are softened and slightly browned.

Add the chopped baby leaf spinach to the skillet and cook for an additional 2-3 minutes until wilted. Remove from heat.

Stir in the dairy-free cheese, lemon juice, dried thyme, and season with salt and pepper to taste. Mix well to combine.

Butterfly the chicken breasts by making a horizontal cut along one side, without cutting all the way through, and open it up like a book.

Divide the spinach and mushroom mixture evenly between the chicken breasts, spreading it over one side of each breast.

Fold the other side of each chicken breast over the filling, and secure with toothpicks to hold them together.
