If you want to increase the fiber content in this meal, you can always swap out the white rice for brown rice or quinoa. Or you can make it as is and just pair it with a side of your favorite veggie.
For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.

Instructions
Step 1
1. Start by adding your chopped chicken to a large mixing bowl, along with 2 Tbsp corn starch, 1 Tbsp olive oil, 1 Tbsp garlic powder, 1/2 Tbsp onion powder, 1 tsp paprika, and a little salt and pepper. Mix to coat.
Step 2
2. Heat a large deep skillet or rice pot over medium-high heat and add in your chicken. Cook for 3-4 minutes on each side or until your chicken is cooked through and is browned on the outside. When done, remove from the skillet and set aside.
Step 3
3. In that same pot/skillet, melt 2 Tbsp of butter, then add in your chopped onions and cook for 2-3 minutes, then add in your garlic and cook for another 30 seconds.
Step 4
4. Next, add your chopped spinach in with your onions, mix and cook for 1-2 minutes or until your spinach starts to wilt.
Step 5
5. Once your spinach cooks down a little, add in 1.5 cups of white rice, mix everything together, and cook for 2-3 minutes.
Step 6
6. Add in 2 cups of chicken broth, 1 cup milk, 1/2 tsp rosemary, and mix together. Let this continue to cook until it starts to boil. Once it starts boiling, reduce the heat to medium-low, cover, and cook for about 15 minutes, stirring halfway through to keep it from sticking to the bottom.
Step 7
7. Once your rice is cooked through, turn off the heat and add in your cooked chicken and 1 cup of grated parmesan cheese. Mix everything together really well.
Step 8
8. Give it a taste and add salt and pepper to preference.
