Step 1
In a food processor mix the flour, butter and sugar

Add the egg yolk and the water

Wrap the dough and refrigerate for 1 hour

Slice the peaches and toss in a bowl

Add the lemon juice, cornflour, vanilla extract, powdered sugar and mix gently
Peach galette

Roll out the dough and arrange the peaches in circles
Step 7
Fold the edges of the pastry to slightly overlap the peaches
Step 8
Brush with the beaten egg
Step 9
Bake at 210C for 20 minutes
Step 10
Serve with vanilla ice cream
