Instructions

Step 1
Firstly, slice your strawberries and gently mix them with 50g caster sugar and vanilla by shaking the bowl. Set aside to macerate for 15 minutes.
Step 2
Pulse 200g (1 1/2 cups flour) and 170g (3/4 cups) cold cubes butter in a food processor for a approx 5 seconds until the butter pieces turn pea sized.
Step 3
Sprinkle 1/3 cup ice cold water over the mixture and process until just moistened (5 seconds).
Step 4
Transfer to a surface and knead 2-3 times until the dough comes together.
Step 5
Shape into a disk, sprinkle flour over your surface and roll into a circle (1/4 inch thick and 16inch diameter). Transfer onto a baking tray lined with parchment paper.
Step 6
Arrange strawberry slices in any pattern of your choice leaving a 3inch border and drizzle some honey over them. Fold over the edges of the dough.
Step 7
Brush the sides with egg and sprinkle over more sugar. Refrigerate for 10 minutes and preheat your oven to 200C/190C fan.
Step 8
Bake for approx 40 minutes/until the pastry is golden. Cool slightly and serve with ice cream. Enjoy :)
